With a name meaning feather, Pluma is a plume-shaped cut popular in Spain. In the US, it's sometimes known as the pork flank steak, but it actually comes from the shoulder-neck area rather than the belly. In its raw state it may not be much to look at - it's a rather messy-looking cut flecked with chunks of white fat - but this is Iberico pork, a breed inclined to store greater fat reserves than others, and that fat is what gives the meat its acclaimed succulence and exquisite flavor. Iberico pigs also spend their lives roaming the dehesas or meadows of Spain, foraging on acorns, nuts and roots that imbue the meat with nutty-sweet flavor leagues ahead of grocery store pork.  Pan-fry, grill or roast this exceptional cut and prepare to surprise yourself with how awesomely delicious pork can be.
